Bake a Cake for Mother’s Day!

Let’s bake a cake for Mother’s Day!

What a personalized gift!  What a courageous act!  How many of us actually bake anymore?  Grocery stores make it too easy to run in, get some nice words put on in frosting, and leave.  But that grocery store cake has no soul.  It’s got no heart.  You paid for it but it didn’t come from you.  Your Mum deserves a top shelf effort.

Does she love cinnamon?  I love cinnamon.  It’s tasty and it’s good for me.  It’s full of antioxidants.  Antioxidants mean anti aging.  Plus, it reduces inflammation in my body and protects my heart.  It helps manage my blood sugar levels and may protect my cognitive functions.

Here’s a recipe for a Cinnamon Swirl Cake with an ooey, gooey, tasty glaze for extra deliciousness.  It’s like a cinnamon bun and a coffee cake had a delicious love child!  And it’s easy.  Really.  So easy.

Here we go.  You Will Need:

(for the cake batter)

3 c white flour

¼ tsp salt

1 c sugar

4 tsp baking powder

1.5 cups milk

2 tsp vanilla extract

½ c melted butter

 

(for the cinnamon swirl)

1 c butter, very soft

1 c brown sugar

1.5 Tbsp white flour

2.5 Tbsp cinnamon

 

(for the ooey, gooey, tasty glaze)

2 c powdered sugar

5 Tbsp milk

1 tsp vanilla

¼ tsp lemon juice

 

Instructions:

Mix all of the batter ingredients without the butter.

Once they are barely mixed, slowly pour in the butter and combine gently.

Pour batter into greased 9 x 9 pan.  Set aside.

Mix cinnamon swirl ingredients together until you get a smooth paste.

Drop cinnamon swirl onto batter and gently swirl in with a butter knife.

Bake in oven at 350 degrees for 40 minutes.

While cake is baking, mix ooey, gooey, tasty glaze ingredients together.

Once cake is done, remove from oven and drizzle glaze over cake immediately.

Let stand 15 minutes.

Then give cake to Momma!!
